Ingredients

  • Peri peri masala - 4 tsp 
  • Black pepper - 1 tsp Fried 
  • Garlic - 2 tsp 
  • Fried curry leaves - handful 
  • Potatoes (cut into wedges) - 3 medium 
  • Olive oil - 2 tbsp Salt

Preparation

  1. Start off by making the spice mix. In a mixing bowl, add 3 tsp of peri peri masala, saving 1 tsp for later. add in black pepper, fried garlic, fried curry leaves and mix. Keep aside .
  2. In the large deep anyday dish, add in the potatoes, add olive oil and coat them properly, season with salt and 1 tsp of peri peri masala and cook in the microwave with the lid on (knob lifted) for 7-8 minutes at 1000W. .
  3. Once the potatoes are nice and cooked through, sprinkle the prepared masala on top and serve. .
