Ingredients
- Ghee - 2 tbsp
- Mustard seeds - 2 tsp
- Potato cubes - 1 cup
- Carrot cubes - 1/2 cup
- Chopped onion - 1
- Chopped green chilli - 1
- Curry leaves - handful
- Coriander powder - 1 tsp
- Salt
- Coconut milk - 250 ml
- Chopped garlic - 1 tsp
- Green peas - 1 cup
- Coriander - for garnish
- Roghan - for garnish
Preparation
- In the anyday large deep dish add the ghee, along with mustard seeds, potato cubes , carrot cubes, onion, green chillies, curry leaves, salt, coriander powder and 2 cups of water. Microwave 5 minutes with lid on and knob lifted at 1000W.
- Add in the coconut milk along with chopped ginger, chopped garlic, green peas and microwave again for 6 mins .
- Garnish with roghan and chopped coriander .
